Lemon Cookies
Ingredients
- 113 Butter (unsalted)
- 226 Cream cheese
- 300 Powdered sugar
- 2 Lemon zest
- 1 1/2 Lemon juice
- 1 Vanilla
- 1/8 Lemon oil
- Yellow gel color (optional)
- 3/4 Salt
- 1 Egg
- 1 Egg yolk
- 270 Flour
- 2 Baking poweder

Directions
- Step 1: In large bowl, cream butter and cream cheese until smooth
- Step 2: Slowly add in powdered sugar and mix until fully combined
- Step 3: Add lemon zest, lemon juice, vanilla, lemon oil, salt and yellow gel color until well incorporated
- Step 4: Add egg and egg yolk. Beat on medium speed until mixture is light and creamy
- Step 5: On low speed, mix in flour and baking powder until just combined - do not over mix
- Step 6: Cover dough and refrigerate for at least 2 hours or overnight
- Step 7: Once chilled, scoop dough into 100g balls
- Step 8: Roll each ball in powdered sugar and place on a baking tray
- Step 9: Bake at 375F for about 10 minutes, or until the edges are slightly golden
- Step 10: Let cookies cool completely, then dust with powdered sugar before serving
